An heirloom cucumber, slightly more tangy and savory than market cukes. Though they tend to develop a rind and sometimes a little bitterness, the latter can be reduced with a cool trick: slice off about 1/2" of the stem end, then rub the flesh against the exposed part of the rest of the cucmber until you see a little bit of white foam.
Quick tip for use:
Excellent for cooking if a bit of rind has already developed, also a good substitute or complement to traditional cukes to lend some additional crunch.
