This captivating tuber is literally a tuberous Nasturtium, with flowers and leaves that also look and taste very similar. Unlike its more common, garden invading cousin however, Mashua ("mosh-wa") grows clusters of large tubers that with the same peppery flavor plus a ginseng-like twang. Raw or grated, it's like an aromatic horseradish condiment. Roasted or grilled until its caramelized, it trades the pepperiness for a sweet, anise and clove finish in its buttery smooth, clean texture (similar to cooked oca).

These magnificent ancient Peruvian vegetables come in many colors and shapes and like Oca, the colors lend themselves to slightly different tasting notes such as Sapu Anu (golden, stubby with red blush) and Puca Anu (gnarled, burgundy teardrop pattern on surface) with their sweeter, less pungent finish, and Pilifera (long, striped, carrot-shaped) that are better fits for grating fresh because of its stronger pungency.
