Arguably the sweetest green onion type whose sugars really come out with age and smells milder than scallions, instantly transforming dishes calling for green onions. This Godzilla of green onions is nurtured anywhere from 10-15 months in the ground as we cover the roots repeatedly with surrounding dirt ("hilling") as they grow taller.
Quick tip for use:
Slice lengthwise into 6" diagonal cuts, brush with butter or oil, and grill. Pair with grilled Squashini®, roasted Atomic Tomatoes and Sweet Jade Tomatoes, and roasted Badger Flame beets.
