------- What is Ssam? -------
The Holy Grail of wraps, tracing back at least 1,000 years in Korean cuisine.
True to its literal meaning in Korean, Ssam is simply a "wrap" of fresh leafy greens and a small dollop of "SsamJang," a soybean paste condiment with a nutty, savory twang. It's often wrapped with raw or cooked vegetables, rice, or meat.
Maybe you've had Ssam, but this is Ssamthing else entirely.
Chrysanth Leaf | Salanova Lettuce
Red Shiso | Huacatay
Blood Sorrel | Ruby Mustard
Red Frill | Iceplant
Spigariello
2 LB Indigo Kiwi Tomato
1 pack Sesame Leaf
2 pcs Squashini or 6-Ball Squash
3 pcs Korean Cucumber
2 bunch Tokyo Negi
Flower Bouquet
1 pack Citrus Gems, Pansies, Nasturtiums
(or similar seasonal flowers)
Tokyo-Negi Lettuce Ssam Salad:
1 head Salanova Lettuce
1 stalk Tokyo Negi
1 tbsp White Vinegar
1 tbsp Sesame Oil
Salt
Pepper
1/2 tbsp Seasoned Sesame Salt (optional)
1/2 tbsp GochuJang (optional)
1/2 tbsp Sugar (optional)
1. Cut the Negi lengthwise into fine slices (stripping with a fork multiple times works well too) and soak in water for 20-30 min. This makes the Negi milder.
2. Chop the lettuce as you would for salad and set aside.
3. Drain the Negi then add it with the lettuce into a large mixing bowl, and toss with vinegar, sesame oil, and the optional items, add salt/pepper to adjust to taste. Optional items infuse savory, sweet & mildly-spicy twang to the salad.
